1sautee vegetables in sauce pan over medium high heat until they are soft (approx 10-12 min). Add crawfish, garlic, and bay leaf. Reduce heat. Cook 10-12 minutes, stirring occasionally. Dissolve flour in water, add crawfish mixture. Season with salt and cayenne to taste. Stir until thickened, then stir in green onion. Serve over rice.
