Chop carrots and add to soup pot.

Mince onion and add to pot.

Mince Ginger and add to pot.

Add broth to pot and bring to a boil. Reduce heat and simmer for 20 minutes.

Add coconut milk to pot. Add batches of soup to processor and process soup till fully blended.

Simmer soup for 20 minutes more and serve.
