Mix first six ingredients together and set aside.

beat egg with fork or whisk, add milk and oil. Whisk again. Add apples, carrots, coconut, raisins, vanilla, pineapple (optional) and walnuts (optional).

Add dry ingredients and mix until well blended.

Spoon into lined muffin tins (about 3/4 full) and bake at 390 degrees for 20-25 minutes until toothpick comes clean.
