combine 4 cups water with 2 Tablespoons of salt; add eggplant and let sit for 30 minutes

drain water from eggplant

heat olive oil in large pan over medium high and add eggplant

quickly mix to distribute oil and eggplant. cook, stirring frequently until eggplant begins to color

lower heat to medium-low and cook eggplant until tender; approx. 10 minutes. stir frequently.

add garlic and mix in

add tomato sauce and diced tomatoes. stir. allow to simmer until thick

off heat, add basil and serve.
