1combine 4 cups water with 2 Tablespoons of salt; add eggplant and let sit for 30 minutes
2drain water from eggplant
3heat olive oil in large pan over medium high and add eggplant
4quickly mix to distribute oil and eggplant. cook, stirring frequently until eggplant begins to color
5lower heat to medium-low and cook eggplant until tender; approx. 10 minutes. stir frequently.
6add garlic and mix in
7add tomato sauce and diced tomatoes. stir. allow to simmer until thick
8off heat, add basil and serve.
