Mix Agave, brown sugar, peanut butter, butter, and egg in a large bowl. Stir in remaining ingredients. Cover and chill for at least 2 hours.

Heat oven to 350 degrees F.

Shape dough into 1-1/4" balls and place on an ungreased cookie sheet 2" apart. Flatten with a fork dipped in sugar, if desired.

Bake 9-12 minutes, or until outer edges are light golden brown, and the centers look slightly undercooked.

Cool for 5 minutes on cookie sheet, then transfer to wire rack to finish cooling.
