| 1 | Place the scallops in a heavy saucepan and add wter to barely cover them. Heat gently 3 to 5 minutes, just until they turn opaque; don''t let them boil or they''ll be tough. Add the milk and heat thoroughly. Tast for salt and pepper and adjust the seasoning.
