Bring to a boil the honey, vanilla, and V8 mango peach juice (careful not to burn...just as the bubbles start indicating it is boiling, turn off the heat.) remember to stir.

preheat oven to 350 and line a deep cookie tray with waxed paper. spray the wax paper with non-stick cooking spray.

spread the granola mixture into the pan evenly.
