Combine dry ingredients in a large mixing bowl and stir to combine

Combine wet ingredients in a bowl, including apples, and stir until thoroughly mixed.

Pour wet ingredients into dry ingredients until all dry ingredients are coated. The batter will be quite goopy.

Pour batter into greased muffin tin and bake for app. 20 min or until brown on top
