grate carrots, set aside. mix brown sugar and apple sauce together, add eggs one at a time. And flours, baking soda, salt and spices. mix. fold in carrots. spray cupcake liners lightly. fill half way. bake 15-20 in normal size cupcake pan at 400 degrees F. cool.

cream cheese at room temp, mix with pineapple juice and powdered sugar. frost cupcakes when cool.
