Soak beans 8 hrs or overnight. Drain and Rinse. Heat oil over md. heat. Add onions and saute for about 5 min. Add salt pork and garlic, saute for about 2 more min. Add beans and stock, stir well and season with remaining seasonings, stir well. Bring to a boil, reduce heat to md. and simmer uncovered for 1 1/2 - 2 hr, stirring occasionaly until beans are creamy and starting to thicken. May puree in blender until smooth.
