1In a large bowl, add the lime juice to the wheat and stir together. Add the cucumber and cumin layered on top. Add, the onion, one teaspoon kosher salt and then tomatoes on top. Chill in the refridgerator for 2 hours, then remove and mix with the 1/2 cup of extra virgin olive oil.
