Preheat oven to 350°F and grease a 10 inch round cake pan

In a medium mixing bowl, mix together yogurt, splenda, salt and vanilla until smooth.

Add the unsweetened applesauce, stiring to combine.

Add eggs one by one stiring after each addition.

In a separate bowl, combine flour, baking soda, baking powder and add to the yogurt mixture.

Stir in the lemon zest.

Transfer the batter to the cake pan and top with raspberries.

Bake cake on center rack for 45 minutes, until golden brown and slightly risen.

Let cool and serve slightly warm or at room temperature.
