Recipe Description Delicious and simple to make, this yogurt cake was a recipe I found in a wonderful book about France.

Steps

1Preheat oven to 350°F and grease a 10 inch round cake pan
2In a medium mixing bowl, mix together yogurt, splenda, salt and vanilla until smooth.
3Add the unsweetened applesauce, stiring to combine.
4Add eggs one by one stiring after each addition.
5In a separate bowl, combine flour, baking soda, baking powder and add to the yogurt mixture.
6Stir in the lemon zest.
7Transfer the batter to the cake pan and top with raspberries.
8Bake cake on center rack for 45 minutes, until golden brown and slightly risen.
9Let cool and serve slightly warm or at room temperature.
