cut down the cauliflower,potatos and carrots

chop the shallots and sweat in the butter in a big pot.

add all the vegetables and stir

add the vegetable broth, cover, and boil for 25 minutes until all the veggies are tender
5
take out a couple of cauliflower florets and add the rest of cooked veggies to a blender

add broth and stir until it has the thickness you like

chop rest of cauliflower and add back into soup
8
enjoy! (if desired you can add cooked or fried sausage)
