green pepper, finely chopped

In a large bowl, combine the drained black beans, corn, peppers and green onions.

Prepare couscous by bringing the water to a boil.

Place the couscous in a large bowl. Pour the boiling water over the couscous. Add olive oil and some salt and pepper.

Cover. Let stand for 5 minutes. Fluff with a fork.

Prepare vinaigrette by combining the wine vinegar, olive oil, mustard, garlic and salt and pepper. Whisk well to combine.

Add couscous to the bean/corn mixture.

Pour vinaigrette over . Mix well to combine.

Just before serving garnish with chopped cilantro.
