medium (approx 2-3/4" long, 2-1/2" dia)green pepper, finely chopped

tablespoons choppedgreen onions

cupcilantro, fresh, chopped

cupred wine vinegar

teaspoonDijon mustard

cups (8 fl oz)water

Steps
Sequence Step
1In a large bowl, combine the drained black beans, corn, peppers and green onions.
2Prepare couscous by bringing the water to a boil.
3Place the couscous in a large bowl. Pour the boiling water over the couscous. Add olive oil and some salt and pepper.
4Cover. Let stand for 5 minutes. Fluff with a fork.
5Prepare vinaigrette by combining the wine vinegar, olive oil, mustard, garlic and salt and pepper. Whisk well to combine.
6Add couscous to the bean/corn mixture.
7Pour vinaigrette over . Mix well to combine.
8Just before serving garnish with chopped cilantro.
