Preheat oven to 350 F. Line baking sheet with parchment paper.

In a large bowl combine dry ingredients, except for dried fruit.

(Optional step) Pulse dry ingredients in food processor until texture resembles coarse bran. Return to bowl.

Mix in dried fruit making certain that it does not stick together in clumps.

In a second bowl combine mashed bananas, oil, and vanilla.

Pour wet ingredients over dry ingredients and stir until well combined.

Scoop with small ice cream scoop or large spoon onto parchment

Flatten into cookie shapes with fingers.
