Steps
Sequence Step
1Preheat oven to 350 F. Line baking sheet with parchment paper.
2In a large bowl combine dry ingredients, except for dried fruit.
3(Optional step) Pulse dry ingredients in food processor until texture resembles coarse bran. Return to bowl.
4Mix in dried fruit making certain that it does not stick together in clumps.
5In a second bowl combine mashed bananas, oil, and vanilla.
6Pour wet ingredients over dry ingredients and stir until well combined.
7Scoop with small ice cream scoop or large spoon onto parchment
8Flatten into cookie shapes with fingers.
9Bake for 25 minutes.
