mix flour and salt in large stand mixer (I have Kitchen Aid 6 quart). Measure milk into quart-sized pyrex measuring cup. Add butter and heat for 2 1/2 minutes in microwave. Measure water into another cup and add 2 TBSP of the honey and the yeast. Whisk until yeast dissolves. Remove milk mixture from microwave. Add 1/4 cup (4 TBSP) honey and whisk. If yeast mix is now foamy, add to milk mix measure and combine. Pour over flour in stand mixer.

Start mixer at lowest setting, gradually adding speed until all flour is incorporated into a dough ball. Set speed on Kitchen Aid to 4 and allow it to knead for 10 minutes.

Spray a large (4-6 quart) plastic bowl or food bucket with non-stick spray. Place dough inside, spray surface of dough and cover container with it''s tight-fitting lid (spray inside of lid before covering) and let rise until double.

Divide dough into 3 equal pieces. (about 650 grams each) flatten each into a 12 X 8 inch rectangle. Start rolling up from short edge, using fingertips to adhere the inside of the roll to the remainder of the dough as you go. Pinch the seam closed and lay seam side down into a loaf pan. Let rest about five minutes and then flatten the loaf into the bottom of the pan so that it touches all sides.

Cover the loaves with a tea towel and let rise until double. Heat oven to 350 degrees and bake loaves for 35-40 minutes. Inside center of loaf should be 190 degrees, bottom and top equally browned.
