1Peel, Dice and boil potatoes. When potatoes are fork tender, drain and let stand in colander until ready to assemble. (Place salt in water). In another pan place eggs in water covered by 1 inch. Bring to a boil. When water starts boilding remove from heat and let stand for 25 minutes. Pour off water and add cold water with some ice cubes to cool eggs. When egg are cool enough to handle, peel and cube. When potatoes and eggs are cool, prepared dressing. In a 2 cup bowl mix mayo, vinegar, sugar, pepper, mustard and celery seed. Taste and add either more vinegar or sugar to taste. Place potatoes and eggs in large bowl and add pickle relish. Pour dressing over relish, potatoes and eggs and mix well.
