Trim the ends off of the green beans.

Blanch the green beans by placing in boiling water for 5 minutes and then removing and placing in ice water for an additional 5 minutes.

Mince the garlic.

Chop the fresh mint.

Add the olive oil, apple cider vinegar, garlic, and mint into a plastic container with a lid.

Add the green beans to the liquid mixture.

Place the lid on the plastic container and shake vigorously.

Refrigerate for at least 30 minutes up to overnight.
