In a large bowl, combine the first seven ingredients.

In a small bowl, beat the egg, bananas, apple sauce and vanilla extract.

Stir into dry ingredients just until moistened.

Fold in zucchini.

Transfer to muffin pans coated with cooking spray.

Bake at 325° for 20-25 minutes or until a toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing from pans to wire racks.
