Step
1
Combine rice and water. Bring to a boil. Cover and cook on low for 20 minutes or until all water has been absorbed.
2
Lightly beat eggs and egg whites. Save egg shells for inclusion in the recipe.
3
Dice liver and combine with ground beef.
4
Cut squash in half, remove seeds and chop into 1 inch chunks. Place in covered, microwave safe container with a small amount of water in the bottom and cook on high until tender. Approx 12 minutes. Scoop cooked squash from rind. Discard rind. Set aside cooked squash to cool.
5
Lightly cook meat mixture and eggs over medium heat in large skillet until meat is brown and eggs are no longer runny. Do not drain.
6
Place reserved eggshells in food processor with a small amount of water and process for 3 minutes. The egg shells should be ground as finely as possible.
7
Combine meat, rice, squash, and eggshell slurry in large bowl. Mix thoroughly. Store in airtight container in refrigerator.
