Chop up all your veggies and mix eggs and egg whites.

Line or spray your muffin pan with spam

Fill muffin cups up 1/3 of the way. Next fill veggies to top of cup. Then fill the rest of the cup with leftover egg mixture.

Place them in the oven at 375 for 20-30 mins
