Directions:
1.) In a hot skillet (preferably cast iron), char onion slices over very high heat and remove.
2.) Place garlic cloves in hot skillet. Toast and remove.
3.) Add 3 tablespoons of the olive oil to the skillet and sear the chile peppers until charred.
4.) Add the remaining olive oil and ingredients to the pan and cook for 1 minute.
5.) Place all ingredients into a food processor fitted with a metal blade.
6.) Process until roughly chopped, but smooth.
