Thoroughly cream coconut oil, sugars and extracts. Put 1T flax meal in 3 T water and let set for 10 mins. Beat into sugar mixture. Stir in rest of water. Sift together dry ingredients; blend into creamed mixture. divide dough in half and chill for 1 hour.
On a lightly floured surface, roll to desired thickness (1/8"-1/4"). Cut into desired shape. Bake on nonstick cookie sheet at 375 for 6-8 minutes or until bottom starts to brown. Let cool slightly before removing from pan. Makes 2 dozen.
