Preheat oven at 400 F. Meanwhile, dice the green onions, carrots, and cut the potato into four quarters. On either parchment paper or aluminium foil, place one filet of cod fish and surround it with the cut vegetables. Add the olive oil, vinegar, salt and pepper. When all ingredients are added, wrap up the foil or parchment paper in a way to prevent steam/heat from escaping. Place foil on a tray that goes into the oven, in case it should drip. Cook for half an hour
