Mix together softened cream cheese, parmesan and minced garlic in a food processor.

Divide cream cheese mixture into thirds.

Place 1/3 of cream cheese mixture into plastic wrap-lined mini loaf pan.

Smooth cream cheese and cover with pesto.

Place another third of the cream cheese mixture over the pesto and smooth top.

Drain oil off of sun-dried tomatoes and chop tomatoes. Layer tomatoes over cream cheese.

Finish off with the final third of cream cheese mixture. Strike the pan on the counter to pack it down.

Cover with plastic wrap and refrigerate 24 hours. Serve with your choice of chips, crackers, or veggies.
