Place 12 qt stock pot over med-high heat and bring beef broth, squash, apples, and onion to boiling. Add remaining ingredients except cornstarch.

Boil for a half hour or until squash and apples are soft.

Stir in cornstarch and keep pot stirring until soup thickens. Serve immediately.
