Preheat oven to 400F

Grease 12 muffin cups or insert paper liners

If the coconut oil is solid, place the container in a bowl with hot water

Mix the flour, sugar baking powder and salt in a bowl

Mix the 1/4 cup flour, brown sugar, butter and cinnamon until crumbly

Using a steel bowl sitting in a sink with hot water, beat the milk, oil, vanilla and egg.

Add the flour mixture and stir until flour is moist. Batter will be lumpy

Fold in Blueberries

Divide evenly into 12 muffin cups

Sprinkle 2 teaspoons of topping (from step 5) over the tops of the batter

Bake for 20-25 minutes until golden brown and/or a toothpick placed into the center comes out clean
