Warm bowl before adding warm water.
Sprinkle yeast over warm water and stir gently.

Add honey into yeast mixture stir and set aside.

In mixing bowl put flour, salt and butter

When yeast mixture begins to rise, add to mixing bowl.

Using electric mixer (KitchenAid) mix at low speed until well combined. Increase speed gradually and maintain at moderately high speed (8) for 5 minutes. Dough should form ball around beater and not stick to side of bowl. If it is still sticky, add small amounts of flour by the tablespoon until it releases from side of bowl.

Remove dough from bowl, spray bowl with Pam or other spray oil. Place dough back in bowl, spray top of dough. Cover with plastic wrap... do not seal.

Set in warm area and allow to rise for 1 hour.

Punch down dough. Form small egg sized rolls. Place on parchment sheet covered cookie sheet. Brush with butter or olive oil.

Cover lightly with plastic wrap and place in a warm place. Let rise 1 hour

Remove plastic wrap and bake in preheated 350degree oven for 12-15 minutes.
