Mix water, yeast, and 1 tsp sugar together. Let sit until creamy, about 10 minutes. Mix flour, sugar, and salt together in a bowl. Make a well and then add the yeast mixture and oil to the well. Mix into a soft dough then lay out on lightly floured area. Knead for 7-8 minutes until smooth. Place in a lightly oiled bowl and cover with plastic wrap. Let sit in a warm area for 1 hour. remove from bowl, separate into 12 sections, roll out into long strips and then make into pretzel shape. Mix 1/2 c baking soda with 4 cups hot water. Dip pretzels into mixture and place onto greased baking sheet. Bake for 8 minutes or until brown at 450 degrees. Remove from oven dip in melted butter and add cinnamon
