1Preheat the broiler. Lightly spray the boiler rack and pan and a large baking sheet with olive oil spray.
2Wearing rubber gloves cut the jalapenos in half vertically. Discard the stems and seeds. Place the jalapenos with the cut side down on the broiler rack.
3Broil 2 inches from the heat for 3 to 4 minutes or until slightly charred. Using tongs turn the jalapenos. Broil for 2 - 3 minutes or until tender / crisp. Remove from the broiler.
4Put the flour and egg substitute in separate shallow bowls. In a third shallow bowl stir together the bread crumbs and the all purpose seasoning. Set the bowl with the flour, the bowl with the egg substitute, the bowl with the bread crumb mixture, and the baking sheet in a row, assembly line fashion.
5In a medium bowl beat the cream cheese until smooth. Stir in cheddar and cumin.
6Preheat the oven to 400 degrees F.
7Wearing rubber gloves, spoon about 1 tsp of cream cheese mixture into the jalapenos. Lightly coat each jalapeno on both sides with flour, then egg substitute, then bread crumbs. Place with the stuffed side up on the baking sheet.
8Bake for 8 - 10 minutes, or until golden brown and warmed throughout. Put the baking sheet on a cooling rack. Let it cool for 3 - 4 minutes.
