Preheat the oven to 350 degrees F. Lightly spray 2 24-cup mini-muffin pans with olive oil spray.

In a large bowl stir together the remaining ingredients until the baking mix is just moistened (don''t over mix). Spoon a heaping tablespoon of the batter into each muffin cup.

With the pans on seperate oven racks bake for 25 - 30 minutes, or until cake tester or toothpick inserted into center comes out clean, switching the pans from top to bottom after 15 minutes of cooking time. Transfer the pans to a cooling rack. Let it cool for 5 minutes. Using a thin spatula, loosen and remove the quiches. Transfer to a platter.
