| 1 | Cook quinoa in rice cooker with 1 cup of almond milk. In a separate bowl, beat egg whites with vanilla, peanut butter, Truvia and 1/2 c. almond milk. Add chopped dates, chocolate chips to quinoa. Add wet ingredients to the quinoa mixture. Pour mixture into a prepared 8x8 pan. Bake at 350 degrees for 28 minutes. |
