soften carrots, celery and onion by cooking in a small amount of water or tomato juice in the stock pot on medium-high heat for 5 - 10 minutes. Add garlic in the last 2 minutes.

Add remaining ingredients starting with water, bring the entire pot to boil.

reduce heat to medium-low to simmer for 30 minutes.

turn off and allow to cool for 10 minute, then serve
