Boil spinach 2 minutes. Drain thoroughly. Finely chop and set aside.

Melt butter and cook shallots and garlic over medium-high heat for 2 minutes.

Add spinach and cook until liquid released, about 5 minutes.

Add cream, salt, pepper, nutmeg and cook until cream reduced by half, about 4 minutes.
