1Gently heat the milk over low heat, stirring constantly, until tiny bubbles begin to form along the edges.
2Beat egg in a separate bowl.
3One tablespoon at a time, add 1/4 cup of the milk to the egg, whisking constantly.
4Pour the tempered egg into the rest of the milk, stirring constantly.
5Cook over low heat until mixture thickens. It is ready when it coats the back of a spoon.
6Pour into a bowl and chill thoroughly.
