Sequence Step
1Mix last five ingredients to make peanut sauce and set aside. Shell shrimp and chop onion and red pepper. Stir fry shrimp until partially cooked. Add onion and stir fry until soft. Add red pepper and peanut sauce. Stir fry until red peppers are slightly cooked. Add coconut milk and bring to a low boil to ensure shrimp are cooked through. Add spinach at the end and allow it to wilt into the mixture. Serve over noodles or rice.
