Steps
Sequence Step
1Combine all ingredients except cheese and sour cream in stock pot on stove or in crock pot.
2Adjust seasonings to taste and simmer on low heat for one hour on in crockpot on low for 6 hours.
3Ladle soup into bowls and top each with one ounce of cheddar cheese and 1/2 tbsp light sour cream
4Add chopped avocado nd crushed tortilla chips if desired.
