Combine all ingredients except cheese and sour cream in stock pot on stove or in crock pot.

Adjust seasonings to taste and simmer on low heat for one hour on in crockpot on low for 6 hours.

Ladle soup into bowls and top each with one ounce of cheddar cheese and 1/2 tbsp light sour cream
