combine cornmeal, flour, paprika, salt, garlic powder and cajun seasoning for breading mixture. drege fillets in breading mixture. place in single layers on sheet pan. hold refrigerated at internal temperature of 40 degreesF or below for use.

discard leftover eggs and breading mixture at the end of meal period.

bake uncovered, in a 325 degree F. convection oven for 12 to 14 minutes or until fish is firm, flakes easily and minimum internal temperature is 145 degrees F. for 15 seconds

arrange fish in single layer in hotel pans. hold hot 140 degrees F. or above for service.
