cupschicken broth, fat free, low sodium

medium slices (packed 20/lb)bacon, cut in 1-inch pieces

1Rinse beans and soak in covered pan overnight. Use pan deep enough so that the water level is about 2 inches above the level of the beans.
2Rinse soaked beans, drain well, place in crock pot.
3Combine all other ingredients in a large bowl, then pour over beans in crock pot and stir.
4Cook beans in crock pot on HIGH for 6 hours and then on LOW for 6-8 hours until beans are desired softness.
5Check occcasionally that beans are not becoming too dry, and add more chicken broth or water if needed.
6This recipe makes a large quantity. Beans can be frozen in air-tight containers and defrosted as needed. When microwaving leftovers, be sure to add a few teaspoons of water per serving to prevent them from drying out. Enjoy!
