Preheat oven to 350 degrees F. Line muffin tin with baking cups or coat them with baking spray.

Cook the quinoa according to package ingredients. (Most tell you to combine 1/2 cup quinoa with 1 cup water. Bring to a boil, then cover and simmer on low for 15 minutes)

In a medium bowl combine the flours, baking soda and salt. In a large bowl combine the brown sugar, applesauce, butter, yogurt, vanilla and eggs. Add the carrots, apples and quinoa, stirring to combine. Fold in the dry ingredients and mix until just combined.

Divide among muffin cups and bake 10-15 minutes for mini muffins or 20-25 minutes for regular muffins. The muffins are done when golden brown and a toothpick inserted in the center comes out clean.
