1. To make the dressing, combine the vinegar, soy sauce, sugar, ginger and pepper. Reserve.

2. Cut the chicken into strips approximately 1.25 x 1.25 x 8 cm. Stir fry the chicken in the sesame oil until cooked. Remove from pan, cool and refrigerate.

3. Blanch the vegetables in boiling salt water. Refresh and drain well.

4. Combine the chicken, vegetables and dressing; toss well and finish with cilantro.
