Prepare all the vegetables

Heat a skillet, on medium high heat

Add sunflower oil

Pour in peppers and onions. Saute until they start to soften

Add the garlic

continue to cook until the peppers and onions start to brown.

Deglaze with lime juice

Add in the squash. Saute for another minute. Turn heat down and cover the skillet.

Cook for 10-12 minutes, or until the squash is tender, but not mushy.
