Shred potatoes with food processor. Put potatoes in colander and squeze out as much liquid as you can. Grate the Onion in Food Processor. Mix together Potatoes, Onions, eggs, flour, salt, and pepper. Heat oil in a non stick pan over medium high heat. Form potatoe mixture into patties (and squeeze out excess liquid) and put in a frying pan. Cook latkes on one side for about 3 minutes or until brown, then flip and cook on other side for another 3 minutes. Serve immediately with apple sauce on the side.
