Add oil to large mixing bowl.

Add pumpkin to oil and mix till smooth.

Add white and brown sugar. Mix until all the sugar is incorporated.

Add egg, milk, vanilla, cinnamon, nutmeg, salt, baking soda, and baking powder. Blend thoroughly. Preheat oven to 325 degrees (F).

Slowly incorporate flour in half-cup increments. The dough (really more of a batter) will be very thick and sticky.

Add cinnamon chips and mix well.

Spoon cookie batter onto cookie sheet, spacing cookies about an inch apart. The recipe should make about two dozen cookies, more or less.

Bake for 10-12 minutes.
