Preheat Oven to 350 degrees. Spray 8x8 pan lightly with olive oil spray.

Using double boiler method (put 1 cup water in small saucepan and place heat safe bowl over saucepan on low heat causing steam from simmering water to gently melt chocolate) melt 3 oz dark chocolate bar. When melted add melted butter and remove from heat and add mint extract stir well.

Stir Almond Butter, Eggs, and Applesauce into chocolate and mix well.

Add wet ingredients to dry ingredients. Mix very well.

Once you have mixed well fold in chcolate chips.

Pour batter into pan and spread evenly. Tap pan on counter to release any air bubbles.

Bake 350 degrees oven until toothpick inserted comes out clean. Cover and Chill 2 hours
