Combine bread flour, sugar, yeast and salt in a bowl of a stand mixer and combine. While mixer is running , add the water and 2 Tbsp of the olive oil and beat until the dough forms into a ball. I f dough is sticky add flout, 1 Tbsp at a time, until the dough comes together in a solid ball. If the dough is too dry add additional water, 1 Tbsp sat a time. Scrape the dough onto a lightly floured surface and gently kneed into a smooth, firm ball. Greas a large bowl with remaining olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough onto a lightly floured surface and divide into 2 equal pieces. Cover wach piece with a clean dry kitchen towel or plastic wrap and let rest for 10 minutes. Then roll out dough and grill or bake in oven.
