Beef, round, bottom round, separable lean and fat, trimmed to 1/8" fat, all grades, raw 3-4 pounds

sliced cheddar cheese

eggs, beaten

Fry up mushrooms and bacon. Cook till done. Set aside.

Crack eggs into bowl, season to taste, scramble, pour into preheated omlet pan on low. Cover leave until slightly runny on top. Turn.

Put cheese slices, bacon/mushrooms, and roast on top and fold over. Turn off heat, cover for 5 min until done.
