Mix all wet ingredients, stir in dry ingredients. Spray cookie sheets with Pam or use parchment paper. Drop level ΒΌ cup of batter for each cookie (8 cookies fit on my larger cookie sheets). Bake 350 for 12 - 14 minutes or until lightly golden and set. Cool on cookie sheet a minute or two before moving to a rack. Makes 26 cookies. Serving size is 2 cookies. Best to freeze them until needed. Pack back-to-back in sandwich bags with a square of waxed paper between.
