Recipe Description good side dish, original recipe found here: http://tastykitchen.com/recipes/special-dietary-needs/vegetarian/roasted-veggie-and-black-bean-burritos/ I eliminated the wrap and used it as a side dish. also cooked it longer than original recipe. the potatoes were still crunchy using the time allotted in original recipe. some may like that, but i thought it needed add'l time.

Steps

1Cube sweet potatoes into small cubes.
2Finely chop onion, bell pepper, jalapeno, and cilantro.
3Toss all veggies with olive oil
4Season with cumin, chili powder, salt, and black pepper. I added Tony Chachere''''s cajun seasoning to taste.
5Bake at 350 degrees for 30 minutes, stirring occasionally. Add drained black beans and bake an additional 15-30 minutes until potatoes are tender.
6Squeeze lime juice over veggies and toss.
