microwaved the squash for 5 minutes so that its tender enough to cut it in half.

cut in half and spray with cooking spray and salt and pepper and bake for 15 to 20 minutes

sautee onions, peppers, garlic, celery and then add the "meat" and sautee so it grabs the flavor.

Add the marinara sauce and soy sauce. Salt and pepper to taste.
